Swiss Steak

Ingredients:

4 pounds beef round 1/2″ thick

3/4 cup flour

4 to 6 tablespoons Crisco

1 tablespoon salt

1/4 teaspoon pepper

2 cups water

2 cans (16 oz.) tomatoes

1 cup chopped cleery

1 cup chopped geen pepper

Method:

In a frying pan, melt the Crisco.  Cut beef into 8 pieces.  Coat the beef with 1/2 cup flour and brown well.  Place meat in a large shallow baking pan.  Blend remaining flour and seasonings into pan drippings.  Gradually stir in water, then add tomatoes, celery and green pepper.  Cook and stir until slightly thickened.  Pour over meat, cover and bake at 325 degrees for about two hours or until meat is tender.

Yields 8 servings

Apple Crisp

 

 

 

(Adapted from Elizabeth’s youngest daughter – Ann

Ingredients:

3 cups apples, sliced

1 tablespoon sugar

3/4 cup flour

2/3 cup sugar

1 stick butter

dash salt

1 teaspoon cinnamon

 

Method:

Mix together the sliced apples and tablespoon of sugar and set aside.  In a separate bowl, mix all of the other ingredients together.  Place the sliced apples into a buttered or Pam-sprayed 8″ pan and sprinkle the topping over the top.

Bake at 350 degrees for 30 minutes

Gingerbread and Lemon Squares

Ingredients:

  • 1 1/4 cup sifted flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/2 cup molasses
  • 1/2 cup water
  • 1/4 cup Crisco
  • 1/4 cup sugar
  • 1 egg

Method:

Sift flour, baking powder, salt, baking soda and spices together.  Combine molasses and water.  Cream Crisco and gradually blend in sugar.  Add egg and beat well.  Add flour and spice mixture alternately with molasses mixture, beating after each addition.

Pour batter into a greased 8″ square pan.  Bake at 350 degrees for 35 minutes. Cool, then cut into squares.

Lemon Sauce:

  • 2/3 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1 cup water
  • 1 tablespoon butter
  • 1 teaspoon grated lemon rind
  • 2 tablespoons lemon juice
  • 2 drops yellow food color (optional)

Method:

Combine sugar, cornstarch, salt in saucepan.  Mix well.  Gradually stir in water.  Cook and stir over medium heat until mixture comes to a boil.  Boil three minutes, stirring constantly.  Remover from heat and add butter, lemon rind, lemon juice and yellow food coloring.

Yields 1 1/3 cups delicious lemon sauce.

Vegetable Soup

 

Ingredients:

1 pound ground beef

1 cup chopped onions

2 Tablespoons butter

4 cups hot water

1 can (16 oz.) tomatoes

1 cup sliced celery

1 Tablespoons salt

1/8 teaspoon pepper

2 bullion cubes

1 package mixed vegetables

1 cup egg noodles

1/2 teaspoon thyme

1/2 teaspoon Worcestershire sauce

Method:

Saute beef and onions in butter in a large saucepan until well browned.  add water, tomatoes, celery, salt, bullion cubes, Worcestershire sauce and pepper.  Bring to a boil, cover and simmer for thirty minutes.  Add mixed vegetables, noodles and thyme.  Cover and simmer for fifteen additional minutes.

Yields:  10 cups delicious soup
