Ingredients:
1/2 cup butter (1 stick)
1/2 cup plain, all-purpose flour
2 teaspoons salt
1/2 teaspoon paprika
2 cups milk
2 cups cheddar cheese, gratted
8 large eggs, separated
Method:
Melt butter in top of a double boiler. Add flour and seasonings, mix well. Stir in milk and cook, stirring constantly until thick and smooth. Add cheese and and stir until the cheese is melted. Remove from heat. Beat egg yolks until light in color and gradually stir into the cheese mixture. Rinse beaters and beat the egg whites until stiff, but not dry. Carefully fold the beaten egg whites into the cheese sauce. Pour the mixture into a greased three-quart casserole dish. Bake at 475 degrees for ten minutes. Reduce the oven temperature to 400 degrees and continue to bake for 25 minutes.
Serve at once! Serve with a salad and fresh fruit.
